  • 1.5 cups cooked brown lentils 300g
  • 1 cup cherry tomatoes halved, 150g
  • 1 cup cucumber diced, 150g
  • 0.5 cup yellow bell pepper diced, 75g
  • 0.25 cup red onion finely chopped, 40g
  • 0.5 cup crumbled feta cheese 75g
  • 2 tbsp extra virgin olive oil 30ml
  • 1 tbsp fresh lemon juice 15ml
  • 2 tbsp fresh parsley chopped, 5g
  • 0.5 tsp salt 3g
  • 0.25 tsp black pepper 1g

Method
 

Preparation
  1. In a large salad bowl, combine the cooked brown lentils, halved cherry tomatoes, diced cucumber, yellow bell pepper, and chopped red onion.
  2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, salt, and black pepper to make the dressing.
  3. Pour the dressing over the lentil and vegetable mixture, tossing gently to ensure everything is evenly coated.
  4. Fold in the crumbled feta cheese and chopped fresh parsley.
  5. Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
