Marinating
- In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.
- Place the chicken breasts in a shallow dish or zip-top bag and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes.
Cooking
- Preheat a grill or grill pan to medium-high heat.
- Grill the chicken for 6 to 8 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
- Let the chicken rest for 5 minutes before slicing and serving.
