  • 2 boneless, skinless chicken breasts approx. 1 lb / 450g
  • 1 tbsp olive oil 15ml
  • 2 tbsp fresh lemon juice 30ml
  • 1 tsp lemon zest 2g
  • 2 cloves garlic, minced
  • 1 tsp dried oregano 1g
  • 1 tsp dried thyme 1g
  • 1/2 tsp salt 3g
  • 1/4 tsp black pepper 0.5g

Method
 

Marinating
  1. In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.
  2. Place the chicken breasts in a shallow dish or zip-top bag and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes.
Cooking
  1. Preheat a grill or grill pan to medium-high heat.
  2. Grill the chicken for 6 to 8 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
  3. Let the chicken rest for 5 minutes before slicing and serving.

Notes

Letting the chicken rest after grilling keeps it juicy.
