Preparation
- Preheat oven to 375°F (190°C).
- Combine shredded chicken, half the enchilada sauce, half the cheese, onion, bell pepper, and spices in a large bowl.
- Warm tortillas briefly until pliable.
- Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a baking dish.
- Top with remaining enchilada sauce and the rest of the cheese.
- Bake for 20-25 minutes until bubbly.
- Cool for 5 minutes and serve with sour cream.
