Ingredients
  

Salmon
  • 4 salmon fillets approx. 6 oz / 170g each
  • 1 tbsp olive oil 15ml
  • 1 tsp salt 5g
  • 1/2 tsp black pepper 2.5g
Mango Salsa
  • 1 cup diced ripe mango 150g
  • 1/2 cup diced red bell pepper 75g
  • 1/4 cup finely chopped red onion 35g
  • 1/4 cup fresh chopped cilantro 10g
  • 2 tbsp fresh lime juice 30ml

Equipment

  • Outdoor grill or grill pan
  • Medium mixing bowl
  • Basting brush

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Brush both sides of the salmon fillets with olive oil and season evenly with salt and black pepper.
Cooking and Assembly
  1. Grill the salmon for about 4 to 5 minutes per side, or until the fish flakes easily with a fork.
  2. While the salmon is cooking, combine the diced mango, red bell pepper, red onion, cilantro, and lime juice in a medium bowl to make the salsa.
  3. Remove the salmon from the grill, place on a serving plate, and top generously with the fresh mango salsa before serving.

Notes

Make sure your grill grates are clean and well-oiled to prevent the salmon from sticking.
