  • 1 cup full-fat cottage cheese 225g
  • 1/4 cup almond flour 30g
  • 1 teaspoon baking powder 5g
  • 1/4 teaspoon cream of tartar 1g
  • 1/4 teaspoon salt 1g

Method
 

Instructions
  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites with cream of tartar in a large bowl until stiff peaks form.
  3. Mix the egg yolks, cottage cheese, almond flour, baking powder, and salt in a separate bowl until smooth.
  4. Gently fold the egg yolk mixture into the beaten egg whites until just combined.
  5. Spoon the batter into 6 mounds on the prepared baking sheet, shaping them into rounds.
  6. Bake for 25-30 minutes until golden brown and firm to the touch.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Store in an airtight container in the refrigerator for up to 3 days. Toast lightly before serving for best texture.
