  • 2 cups mixed salad greens 100g
  • 1 cup cherry tomatoes halved, 150g
  • 1/2 cup cucumber sliced, 75g
  • 1/4 cup red onion thinly sliced, 30g
  • 1/4 cup toasted almonds 25g
Dressing Ingredients
  • 2 tablespoons olive oil 30ml
  • 1 tablespoon lemon juice 15ml
  • 1 teaspoon Dijon mustard 5g
  • 1/4 teaspoon salt 1g
  • 1/4 teaspoon black pepper 1g

Method
 

Preparation
  1. Combine salad greens, cherry tomatoes, cucumber, red onion, and toasted almonds in a large bowl.
  2. Whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper in a small bowl until emulsified.
  3. Pour the dressing over the salad ingredients and toss gently to coat evenly.
  4. Serve the salad immediately.
