  • 2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese crumbled
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • salt and pepper to taste

Method
 

Preparation
  1. Combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese in a large bowl.
  2. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.

Notes

Best served chilled. Can be refrigerated for up to 30 minutes before serving to enhance flavor profile.
