  • 1 lb large shrimp, peeled and deveined
  • 2 ears corn, husked
  • 1/2 cup red onion, diced
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 cups cooked brown rice
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped

Method
 

Preparation
  1. Preheat grill to medium-high heat.
  2. Grill corn for 8-10 minutes, turning occasionally until charred, then cut kernels off the cob.
  3. Combine corn kernels, red onion, lime juice, and cilantro in a bowl; season with salt and pepper and set aside.
  4. Toss shrimp with olive oil, smoked paprika, cumin, salt, and pepper.
  5. Grill shrimp for 2-3 minutes per side until opaque and cooked through.
  6. Serve grilled shrimp over brown rice and top with prepared corn salsa and sliced avocado.

Notes

Ensure shrimp are patted dry before seasoning for a better sear on the grill.
