Salmon and Seasoning
  • 4 fillets salmon fillets 6 oz / 170g each
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • salt and black pepper to taste
Summer Corn Salsa
  • 2 cups sweet corn kernels
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp fresh lime juice

Method
 

Steps
  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season evenly with paprika, garlic powder, salt, and black pepper.
  3. Grill the salmon for 4 to 5 minutes per side until the fish flakes easily with a fork.
  4. Combine the sweet corn, cherry tomatoes, red onion, cilantro, and lime juice in a medium bowl; season with salt to taste.
  5. Serve the grilled salmon warm with a generous portion of the fresh corn salsa on top.
