  • 1 cup almond flour 100g
  • 2 tbsp maple syrup 30ml
  • 1 tbsp melted coconut oil 15g
Filling
  • 1 cup low-fat Greek yogurt 250g
  • 1/2 cup vanilla protein powder 60g
  • 1/4 cup fresh key lime juice 60ml
  • 1 tbsp key lime zest 6g
  • 2 tbsp agave nectar 30ml

Method
 

Instructions
  1. Combine almond flour, maple syrup, and melted coconut oil in a bowl until a crumbly dough forms.
  2. Divide the crust mixture into 4 silicone muffin cups and press firmly into the bottom.
  3. Whisk the Greek yogurt, vanilla protein powder, lime juice, lime zest, and agave nectar until smooth.
  4. Spoon the lime filling evenly over the prepared crusts.
  5. Freeze for at least 2 hours until firm.
  6. Garnish with additional lime zest and fresh lime slices before serving.

Notes

Store in the freezer and let sit for 5 minutes before eating for the best texture.
