Preparation
  1. Place the dried mango in a food processor and pulse until finely minced.
  2. Add the shredded coconut, protein powder, almond butter, and maple syrup to the food processor.
  3. Pulse the mixture until it begins to clump together into a sticky dough.
  4. Scoop small portions and roll them into firm balls using your palms.
  5. Roll the finished bites in extra shredded coconut for a coating.
  6. Refrigerate for 30 minutes before serving.
