  • 1 lb beef sirloin cut into 1-inch cubes
  • 1 medium yellow summer squash sliced into half-moons
  • 1 medium zucchini sliced into half-moons
  • 1 cup cherry tomatoes
Marinade
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • salt and black pepper to taste

  • Grill or grill pan

Method
 

Preparation
  1. Soak wooden skewers in water for 30 minutes to prevent burning.
  2. Whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper in a large bowl.
  3. Add the beef, squash, zucchini, and cherry tomatoes to the bowl and toss to coat thoroughly.
  4. Thread the beef and vegetables alternately onto the soaked skewers.
  5. Preheat your grill or grill pan to medium-high heat.
  6. Grill the skewers for 8-10 minutes, turning occasionally, until the beef is cooked through and vegetables are tender-crisp.

Notes

Soak wooden skewers for at least 30 minutes to prevent them from burning on the grill.
