  • 1 pound lean ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 medium potatoes peeled and cubed
  • 2 medium carrots sliced
  • 1 cup beef broth
  • 1 can diced tomatoes undrained
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley chopped

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat, add ground beef, and cook until browned; drain excess fat.
  3. Add onion and garlic to the skillet and sauté for 3-4 minutes until softened.
  4. Transfer the beef mixture to a baking dish and stir in potatoes, carrots, beef broth, tomatoes, thyme, paprika, and black pepper.
  5. Cover the dish with foil and bake for 45 minutes.
  6. Remove the foil, sprinkle with cheddar cheese, and bake uncovered for another 15 minutes.
  7. Cool for 5 minutes, garnish with fresh parsley, and serve warm.

Ensure all vegetables are cut into uniform sizes for even cooking. Serve warm with crusty bread.
