Ingredients
  

Salad Base
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1/2 cup pepperoncini sliced
  • 1 cup chickpeas cooked
  • 1/2 cup feta cheese crumbled
Dressing
  • 1/4 cup extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • salt and pepper to taste

Method
 

Steps
  1. Combine romaine lettuce, tomatoes, cucumber, red onion, olives, pepperoncini, chickpeas, and feta cheese in a large bowl.
  2. Combine olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper in a small jar and shake well.
  3. Pour the dressing over the salad, toss well to coat, and serve immediately.

Notes

Best served immediately to keep the lettuce crisp.
