Preparation
- Preheat your oven to 350F (175C) and grease a muffin tin.
- Combine the eggs and cottage cheese in a blender and blend until smooth.
- Stir in the shredded cheddar cheese and chopped spinach.
- Pour the mixture into the muffin tin, filling each cup three-quarters full.
- Bake for 20 minutes until the bites are set and firm.
- Remove from the oven and let cool for 5 minutes before serving.
