  • 1 cup cooked brown rice 200g
  • 6 oz chicken breast, diced 170g
  • 1 cup mixed frozen vegetables 150g
  • 2 large egg whites
  • 1 tbsp low sodium soy sauce 15ml
  • 1/2 tsp grated ginger 2g

Method
 

Cooking Steps
  1. Spray a non-stick skillet with cooking spray and heat over medium-high heat.
  2. Add diced chicken breast and cook until browned and fully cooked through.
  3. Add the frozen vegetables and ginger, stirring for 3 minutes.
  4. Push the mixture to one side, pour in egg whites, and scramble until set.
  5. Add the cooked brown rice and soy sauce to the skillet.
  6. Stir-fry everything together for 2 minutes until well combined and heated through. Serve immediately.

Notes

Ensure chicken is cooked thoroughly to an internal temperature of 165°F.
