  • 2 cups (240g) almond flour
  • 1 cup (225g) shredded mozzarella cheese
  • 1/2 cup (120g) turkey pepperoni slices
  • 1/2 cup (120ml) sugar-free pizza sauce
  • 1 large egg
  • 1 tsp (5g) Italian seasoning

Method
 

Preparation
  1. Preheat oven to 400F (200C).
  2. Melt the mozzarella cheese in a microwave-safe bowl, then mix thoroughly with the almond flour and egg to form a cohesive dough.
  3. Roll the dough into a rectangular sheet on a piece of parchment paper.
  4. Spread the sugar-free pizza sauce evenly over the dough, sprinkle with Italian seasoning, and layer the turkey pepperoni slices on top.
  5. Carefully roll the dough into a tight log and slice into even rounds.
  6. Place the rounds on a baking sheet and bake for 15 minutes until golden brown and firm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results.
