Ingredients
  

Filling and Dough
  • 1 cup cooked shredded chicken breast 225g
  • 1/2 cup basil pesto 120ml
  • 1 1/2 cups mozzarella cheese shredded, 360g
  • 2 cups whole wheat pizza dough 480g

Method
 

Steps
  1. Preheat your oven to 400F (200C).
  2. Roll out the pizza dough and cut it into even rectangles.
  3. Combine the shredded chicken and basil pesto in a mixing bowl until well incorporated.
  4. Place a scoop of the chicken mixture onto one half of each dough rectangle and sprinkle with shredded mozzarella.
  5. Fold the dough over the filling and use a fork to crimp the edges to seal the pockets.
  6. Bake for 15 minutes or until the pockets are golden brown and crispy.

Notes

Ensure the edges are crimped tightly to prevent the filling from leaking during the baking process.
