  • 2 cups fresh spinach washed and chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • salt and pepper to taste

Method
 

Preparation
  1. Combine spinach, cherry tomatoes, red bell pepper, red onion, and garlic in a food processor.
  2. Pulse for 10-15 seconds until vegetables are finely chopped but not pureed.
  3. Add olive oil and lemon juice, then pulse again until well combined, scraping down the sides.
  4. Season with salt and pepper to taste and pulse briefly to mix.
  5. Transfer the spread to a bowl and refrigerate for at least 30 minutes before serving.

Notes

Keep refrigerated for up to 3 days in an airtight container.
