Preparation
- Combine spinach, cherry tomatoes, red bell pepper, red onion, and garlic in a food processor.
- Pulse for 10-15 seconds until vegetables are finely chopped but not pureed.
- Add olive oil and lemon juice, then pulse again until well combined, scraping down the sides.
- Season with salt and pepper to taste and pulse briefly to mix.
- Transfer the spread to a bowl and refrigerate for at least 30 minutes before serving.
