Preparation
- Heat vegetable oil in a large skillet over medium-high heat.
- Add ground beef to the skillet and break into small pieces, cooking for 5-7 minutes until browned.
- Season the beef with salt and pepper, remove from the skillet, and wipe the skillet clean.
- Place one tortilla in the skillet over medium heat and sprinkle half the cheese over it.
- Spread the cooked beef over the cheese, then top with tomatoes, onions, pickles, ketchup, and mustard.
- Add the remaining cheese and place the second tortilla on top.
- Cook for 2-3 minutes until golden brown, then carefully flip the quesadilla.
- Cook for another 2-3 minutes until the second side is crispy and the cheese has melted.
- Remove from the skillet, let cool for 1 minute, cut into wedges, and serve.
