Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. Whisk together flour, baking powder, salt, and pepper in a large bowl.
  3. Stir the shredded cheddar cheese and diced apple into the dry mixture until evenly distributed.
  4. Beat the eggs in a separate bowl, then whisk in the milk, vegetable oil, and honey until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
