Preparation
- Preheat your oven to 425°F (220°C).
- Use kitchen shears to cut through the top shell of each lobster tail lengthwise, stopping at the tail fin.
- Gently pull the shell apart and loosen the meat, lifting it to rest on top of the shell.
- Melt butter in a small saucepan over medium heat, add garlic, and cook for 1-2 minutes until fragrant.
- Remove the saucepan from heat and whisk in the lemon juice, parsley, salt, and pepper.
- Place lobster tails on a parchment-lined baking sheet, brush with olive oil, and spoon the garlic butter mixture over the meat.
- Bake for 12-15 minutes until the lobster meat is opaque and cooked through.
- Serve immediately with remaining garlic butter on the side.
