  • 2 lobster tails 400g
  • 4 tbsp unsalted butter 56g
  • 3 cloves garlic, minced 9g
  • 1 tbsp fresh lemon juice 15ml
  • 1 tbsp fresh parsley, chopped 4g
  • 1/4 tsp salt 1.5g
  • 1/4 tsp black pepper 0.5g
  • 1 tbsp olive oil 14ml

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Use kitchen shears to cut through the top shell of each lobster tail lengthwise, stopping at the tail fin.
  3. Gently pull the shell apart and loosen the meat, lifting it to rest on top of the shell.
  4. Melt butter in a small saucepan over medium heat, add garlic, and cook for 1-2 minutes until fragrant.
  5. Remove the saucepan from heat and whisk in the lemon juice, parsley, salt, and pepper.
  6. Place lobster tails on a parchment-lined baking sheet, brush with olive oil, and spoon the garlic butter mixture over the meat.
  7. Bake for 12-15 minutes until the lobster meat is opaque and cooked through.
  8. Serve immediately with remaining garlic butter on the side.

Ensure the lobster meat is opaque and firm before removing from the oven to prevent overcooking.
