  • 1 bag tortilla chips 283g
  • 2 cups shredded cheddar cheese 200g
  • 1 cup cooked black beans drained and rinsed
  • 1 cup cooked corn kernels 150g
  • 1/2 cup diced tomatoes 75g
  • 1/4 cup sliced black olives 35g
  • 1/2 cup sour cream 115g
  • 1/4 cup guacamole 60g
  • 1/4 cup fresh cilantro chopped
  • 1 unit lime cut into wedges

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the tortilla chips in a single layer on a large baking sheet.
  3. Sprinkle the shredded cheddar cheese evenly over the chips.
  4. Scatter the black beans, corn, diced tomatoes, and black olives over the cheese layer.
  5. Bake for 8-10 minutes until the cheese is fully melted and bubbly.
  6. Remove the tray from the oven and allow to cool for 2 minutes.
  7. Add dollops of sour cream and guacamole over the top.
  8. Garnish with fresh chopped cilantro and serve immediately with lime wedges on the side.
