  • 16 oz fusilli pasta
  • 4 cups fresh baby arugula
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup grated parmesan cheese Use vegetarian-friendly parmesan
  • 1 tsp sea salt

Method
 

Preparation
  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
  2. Drain the pasta and rinse under cold water to stop the cooking process.
  3. In a large mixing bowl, whisk together olive oil, lemon juice, and salt.
  4. Add the cooled pasta and fresh arugula to the bowl.
  5. Toss gently until the pasta is coated in the dressing and the greens are wilted slightly.
  6. Sprinkle with parmesan cheese before serving.

Serve immediately or chill for 30 minutes to let the flavors meld.
