  • 1 lb boneless, skinless chicken breasts cut into 1-inch (2.5cm) cubes
  • 2 cups fresh strawberries hulled
  • 1 red onion cut into 1-inch (2.5cm) wedges
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh basil leaves for garnish

Method
 

Preparation & Marinating
  1. In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and black pepper to create the marinade.
  2. Place the cubed chicken in a zip-top bag and pour half of the marinade over it. Toss to coat and marinate in the refrigerator for at least 30 minutes. Save the remaining marinade.
  3. Preheat the grill or grill pan to medium-high heat.
  4. Thread the marinated chicken, strawberries, and red onion wedges alternately onto skewers.
Grilling
  1. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through to an internal temperature of 165°F (74°C).
  2. During the last 2 minutes of cooking, brush the remaining marinade over the skewers.
  3. Remove from heat, garnish with fresh basil, and serve.

Notes

If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning.
