Preparation & Marinating
- In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and black pepper to create the marinade.
- Place the cubed chicken in a zip-top bag and pour half of the marinade over it. Toss to coat and marinate in the refrigerator for at least 30 minutes. Save the remaining marinade.
- Preheat the grill or grill pan to medium-high heat.
- Thread the marinated chicken, strawberries, and red onion wedges alternately onto skewers.
Grilling
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through to an internal temperature of 165°F (74°C).
- During the last 2 minutes of cooking, brush the remaining marinade over the skewers.
- Remove from heat, garnish with fresh basil, and serve.
Notes
If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning.
