  • 1.5 lbs boneless chicken pieces cut into bite-sized portions
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber squeezed dry
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Combine Greek yogurt, grated cucumber, olive oil, minced garlic, lemon juice, dill, salt, and pepper in a large bowl and mix thoroughly.
  3. Add the chicken pieces to the bowl and toss until they are evenly coated in the tzatziki sauce.
  4. Transfer the chicken and sauce mixture into a glass baking dish and spread into an even layer.
  5. Sprinkle the shredded mozzarella cheese evenly over the top of the chicken.
  6. Bake uncovered for 25-30 minutes until the chicken is cooked through and the cheese is golden and bubbly.
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

Ensure cucumber is squeezed very dry to prevent the casserole from becoming too watery.
