  • 4 cups kale leaves stems removed and torn into bite-sized pieces
  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey or maple syrup
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup sliced almonds toasted
  • 1/4 cup dried cranberries
  • 1/4 cup grated Parmesan cheese optional

Preparation
  1. In a large mixing bowl, combine kale leaves, lemon juice, olive oil, honey or maple syrup, salt, and black pepper.
  2. Massage the kale with clean hands for 2-3 minutes until the leaves soften and darken.
  3. Allow the kale to sit for 10 minutes to tenderize.
  4. Add the toasted almonds, dried cranberries, and Parmesan cheese to the bowl.
  5. Toss the ingredients until well combined and serve immediately.

Notes

Refrigerate for up to 2 hours before serving for enhanced flavor.
