Preparation
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Cream butter and granulated sugar in a large bowl until light and fluffy, about 3 minutes.
- Beat in egg and vanilla extract until well combined.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Add pink food coloring gel and mix until the dough is a uniform pink color.
- Shape dough into 1-inch balls and roll each in powdered sugar to coat generously.
- Place balls 2 inches apart on prepared baking sheets.
- Bake for 10-12 minutes until edges are lightly golden and cookies are set but still soft.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
