  • 2 cups all-purpose flour 400g
  • 1 cup unsalted butter softened, 200g
  • 3/4 cup granulated sugar 150g
  • 1 large egg
  • 2 teaspoons vanilla extract 10ml
  • 1/2 teaspoon baking powder 2.5g
  • 1/4 teaspoon salt 1.25g
  • pink food coloring gel as needed
  • 1 cup powdered sugar for rolling, 200g

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream butter and granulated sugar in a large bowl until light and fluffy, about 3 minutes.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Add pink food coloring gel and mix until the dough is a uniform pink color.
  7. Shape dough into 1-inch balls and roll each in powdered sugar to coat generously.
  8. Place balls 2 inches apart on prepared baking sheets.
  9. Bake for 10-12 minutes until edges are lightly golden and cookies are set but still soft.
  10. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Store in an airtight container at room temperature for up to 5 days.
