  • 1 cup unsweetened shredded coconut 80g
  • 1/2 cup almond flour 60g
  • 1/4 cup unsweetened cocoa powder 25g
  • 2 tbsp maple syrup 30ml
  • 1 tbsp melted coconut oil 15ml
  • 1/2 tsp vanilla extract 2.5ml
  • 1 pinch sea salt

Preparation
  1. Place the pitted dates in a food processor and pulse until they form a thick, cohesive paste.
  2. Add the shredded coconut, almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, and a pinch of sea salt, then blend until the mixture forms a sticky dough.
  3. Roll the mixture into small, bite-sized balls.
  4. Roll the truffles in extra shredded coconut or drizzle with a bit of melted chocolate if desired.
  5. Transfer to a plate and refrigerate for 30 minutes to firm up before serving.
