Preparation
- Place the pitted dates in a food processor and pulse until they form a thick, cohesive paste.
- Add the shredded coconut, almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, and a pinch of sea salt, then blend until the mixture forms a sticky dough.
- Roll the mixture into small, bite-sized balls.
- Roll the truffles in extra shredded coconut or drizzle with a bit of melted chocolate if desired.
- Transfer to a plate and refrigerate for 30 minutes to firm up before serving.
