  • 1 cup graham cracker crumbs 100g
  • 2 tbsp melted coconut oil 30g
  • 1 cup low-fat cream cheese 225g, softened
  • 1 cup plain Greek yogurt 250g
  • 2 scoops vanilla protein powder 60g
  • 2 tbsp maple syrup 30ml
  • 1 cup mixed summer berries 150g, strawberries, blueberries, raspberries
  • 1 tbsp lemon juice 15ml

Method
 

Preparation
  1. Mix graham cracker crumbs and melted coconut oil in a bowl until combined. Divide the mixture evenly among 4 small glass cups and press down firmly to form the crust.
  2. In a medium bowl, whip the softened cream cheese, Greek yogurt, vanilla protein powder, and maple syrup together until smooth and creamy.
  3. Spoon the cheesecake mixture evenly over the graham cracker crusts in each cup.
  4. Toss the fresh mixed berries with lemon juice in a small bowl, then spoon them generously over the cheesecake layer.
  5. Chill in the refrigerator for at least 30 minutes before serving.
