  • 4 fillets cod fillets approx. 150g / 5.3 oz each
  • 2 cups cherry tomatoes halved
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves for garnish

Method
 

Preparation and Baking
  1. Preheat oven to 400°F (200°C).
  2. Place the cod fillets in a baking dish.
  3. Toss cherry tomatoes, olive oil, minced garlic, oregano, salt, and pepper in a bowl.
  4. Pour the tomato mixture over and around the cod fillets.
  5. Bake for 12-15 minutes until the fish flakes easily with a fork. Garnish with fresh basil.

Notes

Serve alongside a fresh green salad, roasted zucchini, or over a bed of quinoa for a complete meal.
