Preparation and Baking
- Preheat oven to 400°F (200°C).
- Place the cod fillets in a baking dish.
- Toss cherry tomatoes, olive oil, minced garlic, oregano, salt, and pepper in a bowl.
- Pour the tomato mixture over and around the cod fillets.
- Bake for 12-15 minutes until the fish flakes easily with a fork. Garnish with fresh basil.
Notes
Serve alongside a fresh green salad, roasted zucchini, or over a bed of quinoa for a complete meal.
