  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 2 cups romaine lettuce chopped
Dressing
  • 1 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Method
 

Preparation
  1. Cook pasta according to package directions, then drain and rinse under cold water.
  2. Whisk together Greek yogurt, lemon juice, garlic, Parmesan, olive oil, Dijon mustard, pepper, and salt in a medium bowl until smooth.
  3. Combine cooled pasta, cherry tomatoes, cucumber, and romaine lettuce in a large bowl.
  4. Pour the dressing over the pasta mixture and toss gently to coat evenly.
  5. Serve immediately or refrigerate for up to 2 hours.
