Preparation
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Add the chicken cubes to the bowl and toss to coat thoroughly. Cover and marinate in the refrigerator for 20 minutes.
- Alternately thread the marinated chicken cubes, red onion chunks, and green bell pepper chunks onto the soaked wooden skewers.
Cooking
- Preheat a grill pan or outdoor grill to medium-high heat.
- Cook the skewers for 8-10 minutes, turning occasionally, until the chicken is golden-brown on all sides and cooked through to an internal temperature of 165F (74C).
- Transfer to a plate and serve warm with lemon wedges.
Notes
Soak wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
