Ingredients
  

Marinade & Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 3 tbsp extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
Skewers & Vegetables
  • 1 medium red onion cut into chunks
  • 1 large green bell pepper cut into chunks
  • wooden skewers soaked in water

  • Grill pan or outdoor grill

Method
 

Preparation
  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  2. Add the chicken cubes to the bowl and toss to coat thoroughly. Cover and marinate in the refrigerator for 20 minutes.
  3. Alternately thread the marinated chicken cubes, red onion chunks, and green bell pepper chunks onto the soaked wooden skewers.
Cooking
  1. Preheat a grill pan or outdoor grill to medium-high heat.
  2. Cook the skewers for 8-10 minutes, turning occasionally, until the chicken is golden-brown on all sides and cooked through to an internal temperature of 165F (74C).
  3. Transfer to a plate and serve warm with lemon wedges.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
