  • 4 oz lean ground turkey sausage
  • 2 large eggs
  • 1 large flour tortilla approx. 10 inches
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 pinch salt and black pepper

Method
 

Preparation
  1. Heat olive oil in a non-stick skillet over medium-high heat.
  2. Add ground turkey sausage and cook for 5-6 minutes until fully browned, breaking it up with a spatula.
  3. Whisk eggs with salt and pepper in a small bowl.
  4. Pour eggs into the skillet with the sausage and cook until scrambled and set.
  5. Warm the flour tortilla in a separate dry pan for 15 seconds on each side.
  6. Place the egg and sausage mixture in the center of the tortilla and sprinkle with cheddar cheese.
  7. Fold the sides of the tortilla, roll it up tightly, cut diagonally, and serve.

Notes

Ensure turkey sausage is fully cooked to an internal temperature of 165°F (74°C).
