Preparation
- Heat olive oil in a non-stick skillet over medium-high heat.
- Add ground turkey sausage and cook for 5-6 minutes until fully browned, breaking it up with a spatula.
- Whisk eggs with salt and pepper in a small bowl.
- Pour eggs into the skillet with the sausage and cook until scrambled and set.
- Warm the flour tortilla in a separate dry pan for 15 seconds on each side.
- Place the egg and sausage mixture in the center of the tortilla and sprinkle with cheddar cheese.
- Fold the sides of the tortilla, roll it up tightly, cut diagonally, and serve.
Notes
Ensure turkey sausage is fully cooked to an internal temperature of 165°F (74°C).
