  • 2 chicken breasts, cooked and shredded 400g
  • 4 cups shredded cabbage 400g
  • 2 cups shredded carrots 200g
  • 1 red bell pepper, thinly sliced 150g
  • 1/2 cup chopped cilantro 30g
  • 1/4 cup chopped green onions 30g
  • 1/2 cup roasted peanuts, chopped 75g
Peanut Dressing
  • 1/4 cup creamy peanut butter 65g
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 2-3 tbsp water to thin

Method
 

Preparation
  1. Combine shredded chicken, cabbage, carrots, bell pepper, cilantro, and green onions in a large bowl.
  2. Whisk together all peanut dressing ingredients in a separate small bowl until smooth, adding water gradually until desired consistency is reached.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Top with chopped roasted peanuts before serving.
