  • 1 lb asparagus spears trimmed
  • 2 ears fresh corn husked
  • 2 tbsp olive oil divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1/4 cup fresh parsley chopped
  • 1/4 cup crumbled feta cheese

Method
 

Preparation
  1. Preheat grill to medium-high heat (400°F/200°C).
  2. Brush asparagus and corn with 1 tbsp olive oil, then season with salt and pepper.
  3. Grill asparagus for 5-7 minutes until tender-crisp, turning occasionally.
  4. Grill corn for 10-12 minutes until lightly charred, turning every 3-4 minutes.
  5. Cool vegetables slightly, cut corn kernels off the cobs, and chop asparagus into 2-inch pieces.
  6. Whisk together the remaining olive oil, lemon juice, and honey in a small bowl.
  7. Combine grilled asparagus, corn, parsley, and feta cheese in a large bowl.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Serve immediately or chill for 30 minutes before serving.

Notes

Best served fresh, but can be chilled for up to 30 minutes before serving.
