Salad Ingredients
  • 2 cups cherry tomatoes, halved 400g
  • 1 cup cucumber, diced 150g
  • 1/2 cup red onion, thinly sliced 75g
  • 1 cup feta cheese, crumbled 150g
Dressing
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar Halal alternative to red wine vinegar
  • 1 tsp dried oregano
  • salt and pepper to taste

Method
 

Preparation
  1. Combine the cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
  2. Whisk together the olive oil, balsamic vinegar, oregano, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and toss gently to coat before serving immediately.

Notes

Best served fresh. If preparing ahead, keep the dressing separate until just before serving.
