  • 1 cup sliced bell peppers

  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons brown sugar
  • 2 green onions sliced
  • 1 tablespoon vegetable oil

Preparation
  1. Heat vegetable oil in a large pot over medium heat. Add mushrooms, bell peppers, and broccoli; sauté for 5-7 minutes until tender-crisp.
  2. Add red curry paste to the vegetables and cook for 1 minute, stirring constantly.
  3. Pour in vegetable broth and coconut milk; bring to a simmer.
  4. Add soy sauce, brown sugar, and lime juice; stir well to combine.
  5. Add ramen noodles to the simmering broth; cook according to package directions (3-4 minutes).
  6. Divide the ramen among four bowls and garnish with sliced green onions.
