Salad Base
  • 2 cups cooked chicken pieces, shredded
  • 1/2 cup celery, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 4 large lettuce leaves for serving
Dressing
  • 1 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • salt and black pepper to taste

Method
 

Preparation
  1. Whisk together mayonnaise, sweet chili sauce, lime juice, garlic powder, smoked paprika, and cayenne pepper in a large mixing bowl until smooth.
  2. Add the shredded chicken, celery, red bell pepper, red onion, and cilantro to the dressing mixture.
  3. Fold the ingredients gently until everything is evenly coated.
  4. Season with salt and black pepper to taste.
  5. Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  6. Arrange the lettuce leaves on plates and spoon the chicken salad mixture into each leaf.
  7. Garnish with extra cilantro if desired and serve immediately.
