Base Ingredients
  • 2 cups cooked chicken pieces, shredded
  • 1 cup white rice, uncooked
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1/4 cup sriracha sauce
  • 1 cup frozen peas and carrots mix
Topping and Seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 to taste salt and pepper

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Combine shredded chicken, uncooked rice, chicken broth, heavy cream, mayonnaise, sweet chili sauce, sriracha, frozen vegetables, garlic powder, onion powder, salt, and pepper in a large bowl and mix thoroughly.
  3. Transfer the mixture to a glass baking dish and spread it into an even layer.
  4. Sprinkle the shredded cheddar cheese evenly over the top of the chicken mixture.
  5. Mix panko breadcrumbs with olive oil in a small bowl until coated, then sprinkle over the cheese layer.
  6. Bake for 35-40 minutes until the top is golden brown and the edges are bubbling.
  7. Remove from oven and let cool for 5-10 minutes before serving.

Notes

Ensure chicken is fully cooked before mixing. Let the casserole rest after baking to allow the sauce to set.
