  • 8 slices sourdough bread
  • 1 cup shredded cheddar cheese 200g
  • 8 oz sliced turkey breast 225g
  • 1 cup fresh spinach leaves 30g
  • 2 tbsp mayonnaise 30ml
  • 1 tbsp Dijon mustard 15ml
  • 2 tbsp butter 28g

Method
 

Preparation
  1. Spread mayonnaise on one side of each bread slice and Dijon mustard on the other side.
  2. Layer turkey slices, spinach, and cheddar cheese between two bread slices to form sandwiches.
  3. Heat a skillet or griddle over medium heat and melt 1 tablespoon butter.
  4. Place sandwiches in the skillet and cook for 3-4 minutes until golden brown.
  5. Add remaining butter to the skillet, flip sandwiches, and cook another 3-4 minutes until cheese is melted and bread is crispy.
  6. Remove from heat, let cool slightly, then slice diagonally and serve immediately.

Notes

Ensure the heat is medium so the bread toasts without burning before the cheese melts.
