Ingredients
  

Roasted Chickpeas
  • 1 can chickpeas drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
Dressing and Salad
  • 1/4 cup lime juice
  • 2 tbsp tahini
  • 1 tbsp maple syrup
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup sliced cucumber
  • 1/4 cup fresh cilantro chopped

Method
 

Steps
  1. Preheat oven to 400°F (200°C).
  2. Toss chickpeas with olive oil, chili powder, garlic powder, and salt in a bowl.
  3. Spread chickpeas on a baking sheet and roast for 20-25 minutes until crispy.
  4. Whisk lime juice, tahini, and maple syrup in a small bowl until smooth.
  5. Combine greens, tomatoes, cucumber, and cilantro in a large bowl.
  6. Add crispy chickpeas to the salad and drizzle with the dressing.
  7. Toss gently and serve immediately.

Notes

Store dressing separately from greens to keep the salad fresh for longer.
