  • 1 can chickpeas drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
Dressing
  • 1/4 cup lime juice
  • 2 tbsp tahini
  • 1 tbsp maple syrup
Salad Base
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup sliced cucumber
  • 1/4 cup fresh cilantro chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the chickpeas with olive oil, chili powder, garlic powder, and salt in a bowl.
  3. Spread the seasoned chickpeas onto a baking sheet and roast for 20-25 minutes until crispy.
  4. Whisk together the lime juice, tahini, and maple syrup in a small bowl until smooth.
  5. Combine the mixed greens, cherry tomatoes, cucumber, and cilantro in a large bowl.
  6. Add the roasted chickpeas to the salad, drizzle with the dressing, toss gently, and serve.
