  • 1 cup cherry tomatoes, halved 150g
  • 1 cup cucumber, diced 150g
  • 1 cup fresh blueberries 140g
Dressing and Seasoning
  • 2 tbsp extra virgin olive oil 30ml
  • 1 tbsp balsamic glaze 15ml
  • 1 pinch salt and pepper to taste

Method
 

Preparation
  1. Combine the cherry tomatoes, diced cucumbers, and blueberries in a large mixing bowl.
  2. Drizzle the extra virgin olive oil and balsamic glaze over the fruit and vegetable mixture.
  3. Toss the ingredients gently until they are evenly coated with the dressing.
  4. Season with salt and pepper to taste and serve chilled.

Notes

Best served chilled immediately after tossing.
