  • 1 medium sweet potato peeled and diced
  • 1/2 cup red bell pepper diced
  • 1/2 cup yellow onion diced
  • 8 oz lean ground beef
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp fresh parsley chopped

Method
 

Cooking Steps
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potato, red bell pepper, and onion, cooking for 8-10 minutes until tender.
  3. Push vegetables to the side and add the ground beef, cooking until browned for 5-6 minutes.
  4. Stir the smoked paprika, garlic powder, salt, and pepper into the mixture.
  5. Create two wells in the hash, crack an egg into each, cover, and cook for 4-5 minutes until whites are set.
  6. Garnish with fresh parsley and serve warm.

Notes

Ensure the sweet potatoes are cut into small, uniform cubes to ensure they cook through within the time frame.
