Preparation
  1. In a large bowl, combine the drained cannellini beans, cherry tomatoes, and diced cucumber.
  2. In a small jar, whisk together the olive oil, lemon juice, salt, and pepper until emulsified.
  3. Pour the dressing over the bean mixture and toss gently to coat evenly.
  4. Garnish with fresh herbs if desired and serve immediately at room temperature.

Notes

Best served immediately at room temperature. Store leftovers in an airtight container in the refrigerator for up to 2 days.
